For those on sloppy foods!
LAMB MACCARONI (serves 3-4) (supplied by Trish)
- 400 grms lean diced Lamb
- 1 Onion finely chopped
- 1 jar(about 400grms) of roast red peppers, drain off the oil (all the supermarkets sell them)
- 600 mls of Passata
- 3 lamb stock cubes and 1500 mls boiled water to make a stock
- 250 grms dry maccaroni
- 2-3 teaspoons Dried Oregano
- Olive Oil 2-3 spoonfulls
- Salt to taste
Pre heat oven to 180 degrees (sorry, don't know what that is on gas). Heat Olive Oil in a large pan and seal the diced lamb, remove and set to one side. Fry the onions in the same oil until soft and then return the lamb to the pan. Add the hot stock, Passata, Oregano and salt and bring to the boil. Transfere to a large lidded casserole dish, add the peppers and cook covered for about 50 mins in the oven (dont worry if it looks watery at this stage). After the 50 mins is up add the Maccaroni, cover again and return to the oven for a further 40-50 mins.

Produced by Brenda Brady, in association with the Mouth Cancer Foundation, Brenda's Easy-to-Swallow Cookbook is for mouth cancer sufferers, and anyone who has difficulty chewing and swallowing food.
The softback book contains 40 pages of recipes and tips, from various people, including fellow sufferers and celebrity chefs Nigella Lawson, Rick Stein, Antony Worrall Thompson and Phil Vickery, who all kindly gave recipes for free.
Following Brenda's death last year (2008), her husband John finished the book, and the first edition is now available to publish. All profits go to the Mouth Cancer Foundation.
